Nectarine & Nasturtium Salad

“Makes 1 big salad for 1 hungry person or as a side salad for 2 adults!”


Ingredients

baby romaine lettuce: 3 cups

nasturtium leaves and flowers: 1-2 cups (stems removed)

goat cheese: 2 oz

lemon: half (juiced)

extra virgin olive oil

salt: (flaky)

cracked pepper

nectarines or peaches: 2 (sliced)

Instructions

  1. In a large salad bowl, toss romaine and nasturtium together. Sprinkle hunks of goat cheese and nectarines on top, then squeeze half a lemon over the top. Drizzle olive oil over the top of the salad and sprinkle sea salt and crank out some turns on the pepper grinder. Enjoy!
